Akashi Single Malt $27
Produced by Eigashima Distillery, founded in 1888, in the city of Akashi. This the brand's flagship malt. Due to Eigashima’s coastal climate, Akashi whiskies impart a unique briny quality that is especially apparent in the Akashi Single Malt. Aged approximately 5-8 years in ex-Bourbon, sherry, brandy and barley casks, this whisky's prominent notes of salted caramel and subtle peat boasts a long, buttery finish.

Located in Akashi near Kobe, Japan, Eigashima Distillery is both the country’s oldest and smallest whisky distillery. Akashi is a coastal town residing on the edge of Osaka Bay. Akashi White Oak Japanese Whisky has a malty, citrusy aroma with scents of black cherry, toffee and oak. This whisky is made with a variety of wheat, barley and rye with hints of subtle peat. The Fukano $22
Founded in 1823, Fukano Distillery is located in Hitoyoshi City, of the Kumamoto Prefecture of Japan on the island of Kyushu. Hitoyoshi is surrounded by mountains and is known for its pure water and nature. Crafted from a combination of malted and un-malted rice, this dram was distilled in a pot still before it was matured in red Wine casks and Manzanilla Sherry casks. Taste the wonderful balance of raw honey and fruity tones from the red Wine casks as well as savory flavors from the Manzanilla Sherry casks. And let’s not forget the unmistakable umami.
FUYU $XX
Fuyu means winter. This whisky is a blend of malts and grains from Japan's Honshu island where the distilleries are located. You can expect notes of caramel, vanilla and honey on the nose with notes of plum wine. The palate is sweet and tart in the mouth with notes of dried fruits and green grapes and baking spice. The mouthfeel has a touch of umami and bitterness. The finish is medium and light with notes and subtle ginger.
Fukano 10 Year $XX
Crafted with malted rice and aged for a full decade in ex-brandy puncheons. Elegant, silky and light with complex notes of exotic woods and florals, this is an intriguing and flavorful whisky. A delicate aroma with floral, mixed citrus, and sandalwood. The palate is silk and complex boasting exotic spices, mint, white plum, and marmalade. Ichiro's Malt & Grain is blended by the king of independent Japanese distillers: Ichiro Akuto. Ichiro’s blend is a worldwide blended whisky in every sense of the word, a marriage of whiskies from Ichiro’s very own young malt & grain whisky stock, and whiskies from eight other distilleries in Scotland, Canada, England, Ireland and the U.S., which founder Ichiro Akuto refers to as, "the big five." KAIYō Cask Strength $32
Kaiyo whisky is aged in handmade, bespoke Mizunara oak casks. These barrels are crafted from slow growth, air-seasoned wood from hand-selected trees. After the whisky is aged, it is finished at sea, imparting even more distinctive character the spirit. This unique sea voyage departs from Osaka Japan, and the journey can take up to 3 months. The oak’s lactones ratio and vanilla impart sweet, spicy, exotic notes of incense, sandalwood, and coconut. Other notes like tea and subtle hints of citrus appear all throughout the nose and palate. Citrus peel, vanilla, banana, pineapple and tea leaves on the nose. The palate is subtle and smooth with sweet vanilla, fruit, silky dark chocolate, and an oaky presence. Kisoyama Yhi $11
The Distillery is Japan’s highest whisky distillery at 2,600 feet above sea level and is owned by Hombo Shuzo Co. They age their whiskies in Sherry, Brandy and Bourbon casks. Kisoyama Yuhi Whisky is clean and light with warm vanilla notes and a touch of pepper spiciness. This whisky is aged in American white and sherry casks.
Kujira 3 year Ryuku $19
Kujira Ryukyu Whisky was distilled from selected Indica rice that was fermented with the unique black Koji mold. The spirit is matured in virgin white oak cask, and this limited-edition expression is a blend of the 8-year Kujira Ryukyu Whisky and whisky matured for at least three years. Mars Whisky Iwai Blue Label $16
Kiichiro Iwai, the name sake of this Mars Shinshu release. This whisky is inspired by great whiskies of America. Mostly corn followed by malt and a hint of rye aged in ex-bourbon barrels. The nose is floral with fruit, caramel, corn, and vanilla. You'll find vanilla, burnt sugar, orange zest, oak, and hints of mint on the palate. The finish is brisk and smooth.
Mars Whisky Iwai Tradition $21
Incredibly balanced, soft and layered. A blending of sherry, bourbon and wine casks with a dash of peat makes for a harmonious whisky that would make Iwai-san proud. This unique Ryukyu whisky spent at least 11 years in American Oak ex-bourbon hogshead casks and finished in first filled Oloroso Sherry casks for 12 months before bottling. This whisky reflects the dedication to masterful distilling and blending dating back to the founding of our distillery in 1883. A single malt from the Kurayoshi Distillery, which resides in the foothills of Mt. Daisen. Nagahama Roman $11
Nagahama Distillery, founded in 2016 is the smallest distillery in Japan, so their own whisky is not reserved sufficiently yet. Therefore they have been importing whisky from Scotland, where their master blender thoroughly studied about whisky production before the distillery’s foundation. The master blender selected whisky carefully, visiting various distilleries in Scotland. Refreshing aroma reminiscent of the richness of chocolate, orange peel, tropical fruit and pleasant herbs. Tenderness like white peach, cotton candy and caramel, while maintaining rich sweetness and freshness. Long finish and lingering gentle taste.

Nikka Coffey Malt $25
Meticulously crafted at the Miyagikyo Distillery, Nikka Coffey Malt Whisky is a single malt made with 100% malted barley. Once the grains arrive at the distillery, they are milled and mashed before being distilled through copper-pot stills (sometimes called “Coffey” stills) that were imported from Scotland in 1963. As a result of their age and shape, the stills produce a whisky that is more flavorful and complex than modern column stills. Following distillation, the whisky is matured in traditional oak casks. Nikka Coffey Malt Whisky has an aroma of cinnamon, lemon and butterscotch, which gives way to an intoxicating palate filled with clove, coconut, orange marmalade and oak. This Highlander-style whisky was actually made in Miyagi prefecture, Japan. It was dutifully matured in former sherry casks, showcasing its rich palate with a tinge of peated malt flavor. The nose opens with full-flavored notes of bitter green apple, citrus zest, nougat, and ginger. Vanilla custard, nutmeg, cinnamon almonds, and coffee linger on the palate alongside subtle smokiness. This special sherried expression also received “92 Excellent, Highly Recommended” from the Beverage Tasting Institute in 2017, and “92 Points, Excellent, Highly Recommended” for the Japanese Whisky category at the USC Awards. St George Baller Single Malt $15
Once the raw spirit is produced, it is aged for about three years in a selection of barrels. Specifically, they are aged in previously used bourbon barrels and French oak wine casks. Once properly matured, the whiskey is filtered through a charcoal filtration process and then finally finished in casks that previously held their house-made umeshu (a Japanese plum liqueur made from California grown ume fruit, a Japanese strain of plums).

What comes out of the barrel is a balanced drink with a deep amber hue. It holds aromas subtly evoking vanilla and the fresh bloom of spring. In its medium body are threads of coffee and citrus zest. Significant wood aroma, Mizunara Oak, dark ripe fruit like blueberry, cinnamon. Sweet malty note with significant woody flavor like sandalwood, that brings out different levels of spices.
